It's July already!

And yet again we are blessed with summer rain.
In so many years that I've seen the pours,
it still surprises me,
for never do I consider the grey clouds
nor do I carry an umbrella,
in the hope that just this once,
the shy English sun will come out to say hi!

So again... I came home with wet toes,
and packed heavy with a colourful bouquet!
The nourishing kind,
Topped with deep green leaves
with stems in bright yellows and orange,
and tones of an almost fuscia.

And because it's summer
even though a cold wet summer,
Here's to a light,
but hearty pasta.

Ingredients
3 cloves of garlic, sliced thinly
1/2 red onion, chopped finely
5 large stems of swiss chard
200 g whole wheat spaghetti
2 spoons olive oil
Salt & pepper
In a deep pan boil water for "cook the spaghetti al dente". Remember to salt the water once boiled.

Gently heat the olive oil in a medium sized pan and soften the finely sliced garlic. Add the chopped onion and thickly sliced swiss chard stems. Season with salt and pepper.
Saute until cooked and begin to add pasta water (for a silky thickened sauce).
Add finely sliced swiss chard leaves until wilted.
Once spaghetti is cooked, strain and add to pan.
Drizzle with more olive oil and serve immediately!

  3. I truly wish we were fortunate enough to get those rainbow chard varieties here in Australia. So beautiful, so simple, I love how nutritious (and yet,) oh do pretty they are.

    Your photos are gorgeous as always, how did you make that pasta look so good!

  4. Everyone has already said how beautiful your photos are, but really, they are making my mouth water. Besides, I love pasta with vegetables and chard is in season in Germany so we can get it en masse. I will try this. Definitely. Drool…
